The Montauto estate covers 130 hectares of forest, cereals, olives and vines. It is 15 kilometres from the coast in an unspoilt corner of Tuscany's Maremma. The soil is clay layered with pebbles allowing good drainage and aeration. Of the 12.5 hectares of vines the majority are 40 years old, with further blocks 15 years old and younger. The grapes for the Sovana Rosso come from blocks between 7 and 15 years old with an avarage yield of 1.5kgs per plants.
The wine is made in temperature controlled stainless steel tanks. After 15 days maceration, the wine matured for a further 6 months in the tank, before blending and bottling.
